With a seasonal tasting menu tailored around what their dedicated suppliers have managed to forage from the wild, no two dishes will ever be the same. Wildflower also has a zero-waste policy, fermenting and preserving seasonal ingredients and using oil waste to power the lighting in the container. Silo is the world’s first zero-waste restaurant. They take their zero-waste pledge so seriously that they don’t have a bin. Every part of the produce is used, applying nose-to-tail principles for animal products and entire fruits and vegetables used in innovative and creative ways. Silo ensure that all their products are delivered to the restaurant in reusable containers, reducing waste in the supply chain. They even furnished the restaurant with upcycled items, proving that sustainability can be stylish and that fine dining doesn’t have to be detrimental to the environment.
